Hitting the Road

Pick & Cheese is part of a family of cheese-focused experiences founded by Mathew Carver, a passionate advocate for artisan cheese. It all began in 2014 with The Cheese Truck — a converted ice cream van serving grilled cheese sandwiches at festivals and events across the UK.

Since then, the journey has grown to include The Cheese Barge (2021), a 96ft floating restaurant moored in Paddington, London, and Rind (2023), a wood-fired pizzeria dedicated to cheese-led cooking in North Yorkshire.

Mathew has built a reputation as one of the UK’s leading champions of independent cheesemakers, proudly flying the flag for local dairy at every opportunity.

Belts and Braces

Pick & Cheese launched in Seven Dials Market (Covent Garden, London) in 2019, born from Mathew’s vision to make British cheese more accessible, fun, and interactive — inspired by Japan’s iconic conveyor-belt sushi restaurants.

As the world’s first cheese conveyor belt restaurant, it quickly gained international attention and has since introduced thousands of guests to the very best of British cheese.

Bottomless Plates

Shortly after opening, Covid hit — and many of the incredible producers we work with at Pick & Cheese were left with a surplus of cheese as hospitality sales dried up.

Mathew saw an opportunity to help: what if we launched a Bottomless Cheese day, where guests could indulge in as much cheese as they liked, while we supported our makers by moving stock?

And so, Bottomless Plates was born.

Now a much-loved fixture, every Wednesday at any Pick & Cheese, you can live your cheese dreams — one plate at a time, straight off the belt.

Eat More German Cheese

When the opportunity came to take Pick & Cheese overseas with our first international opening, Mathew and the team jumped at it — eager to spread the word of great local cheese to a new city.

Driven by the belief that cheese should always be sourced locally to the restaurant, the team dove into Berlin’s cheese scene, visiting several times to discover the very best small-producer cheese Germany had to offer.

In May 2025, Pick & Cheese – Berlin was born. The conveyor belt of dreams had officially gone international.

Whats next?

Fast forward to today, and we have three Pick & Cheese restaurants — two in London and our first international site in Berlin, proudly championing German cheese while staying true to our roots. We continue to fly the flag for independent cheesemakers and push the artisan cheese industry forward.

Next year, we’ll open our second international location, celebrating another country’s incredible cheese culture.

The future? Who knows — but we’re excited for the journey ahead.
